Vegetable Parfait

Leslie Duerson, RD, CDE, has a Vegetable Parfait that is a winner: In a parfait or other fancy glass, make colorful layers of vegetables and add a small drizzle of ranch or Italian dressing between every few layers.
Good vegetables for this include: cherry tomatoes, cucumber, mushrooms, radishes, grated carrot, green onion, thawed frozen peas, baby spinach leaves, garbanzo beans, sweet soy beans, cooked chilled asparagus tips, artichoke hearts. Top with a radish rose, carrot coins, or a broccoli floret.
