Rainbow Rotini

Here is a beautiful picture of rainbow rotini pasta - from our collection of photos.  Rainbow RotiniAnd another favorite - bulgur - I love to make tabouleh with it!BulgurTabouleh2 cups bulgur2 cups very hot water1 cucumber, chopped1 small tomato, chopped1 bunch green onions, chopped1/2 cup fresh mint, chopped2 cups chopped fresh parsleysprinkle granulated garlicDressing:1/2 cup fresh lemon juice1 tablespoon olive oilblack pepper to taste1. Pour hot water over bulgur and allow to stand until water is absorbed, about 30 minutes (you can do this before class starts).2. Combine the rest of the ingredients in a large bowl and mix well.
