Each 1 cup serving: 211 calories, 4 g fat, .5 g saturated fat, 0 cholesterol, 71 mg sodium, 36 g carbohydrate, 3.5 g fiber, 8 g protein.Create a buffet with various soy products to try. Our recommendations would include: veggie burgers, veggie breakfast sausage, soy milk, soy yogurt, soy cheese and pudding made with tofu. These are all items that are easy to find and are healthy substitutions for higher fat versions of animal products. If you have time, try making lasagna using a filling made with silken tofu blended with a little parmesan in place of ricotta cheese.Another fun idea for soy is to hold a cooking contest or pot luck meal using soy ingredients. Give participants a fact sheet on soy products and offer several URLs for where they can go for ideas and recipes. We have an extensive list of 48 soy links at www.foodandhealth.com - click on Food Links then Food Links then Soy Links.
