Roasted Chicken Thighs and Cherry Tomatoes

Roasting chicken thighs and cherry tomatoes together makes a nice dinner that is very easy because it takes advantage of unattended cooking time.

  • 4 each chicken thighs
  • 4 cups cherry tomatoes
  • 1 tsp olive oil (extra virgin)
  • 4 cloves garlic
  • 1 sprig fresh thyme (or use dried)
  1. Preheat the oven to 425 degrees.

  2. Place the chicken thighs, cherry tomatoes, and garlic in a roasting pan or oven-proof skillet.

  3. Roast uncovered for 25 minutes, stirring a few times.

  4. Serve hot.

  5. This dish goes well with a salad and brown rice or boiled potatoes.
