1 H & 15 MThis pizza bakes the crust first so that the tomatoes are just warm roasted on top of a crunchy cheesy crust.
Ingredients
Dough
- 1 cup warm water (100 degrees F)
- 1 packet instant dried yeast
- 2- 1/2 cups all purpose flour
- 1 tablespoon brown sugar
- pinch sea salt
- 1 tablespoon olive oil
Basil Pesto
- 2 cups fresh basil leaves
- 1/4 cup olive oil
- 1 tsp minced garlic
- 1 tsp black pepper
Pizza Toppings
- 5 heirloom tomatoes, preferably in several colors including red, yellow, and green, cored and sliced thin
- 1 cup light mozarella cheese
- 1 tablespoon grated Parmesan cheese
- pinch red pepper flakes
Instructions
Pizza
- Add the yeast to the water. Mix well.
- Add the flour, sugar, salt and oil. Mix well to a soft dough, adding more water or flour to get the right consistency.
- Mix well until the dough is elastic.
- Place the dough in a covered bowl in a warm area and allow to rise for 45 minutes.
- Punch the dough down and roll out to fit a cookie tray.
- Bake in a 400 degree oven for 10 minutes. Top with the mozzarella cheese and bake for another 4 minutes.
- Remove the crust from the oven and top with basil pesto, sliced tomatoes, Parmesan and red pepper.
- Bake for 7 minutes at 375 degrees.
- Cut and serve hot.
Basil pesto
- Place all ingredients in food processor and pulse on high speed until pureed.
