25 MinA Buddha bowl is a healthy grain bowl made with a base of whole grains and topped with veggies and protein.
Ingredients
- 2 cups quinoa
- 2 cups water
- 4 boneless, skinless chicken breasts
- 1 tsp garlic
- 1 tsp red pepper
- salt to taste
- 2 carrots, cut in julienne strips
- 1 cup tomatoes, cut in half
- 1/4 red onion pickled with 1 tablespoon red wine vinegar and 1 tsp Italian seasoning
- 4 cups tossed salad (toss with vinegar, oil, and italian seasoning
- optional: your favorite dressing
Instructions
- Cook the water, quinoa, and chicken breasts in an Instapot for 15 minutes.
- Remove the chicken breasts and shred them in a bowl with 2 forks.
- Stir the quinoa and divide between 4 bowls.
- Top with all of the ingredients. Optional add your favorite dressing on top of all if you like.
