A Buddha bowl is a healthy grain bowl made with a base of whole grains and topped with veggies and protein.

Ingredients

  • 2 cups quinoa
  • 2 cups water
  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic
  • 1 tsp red pepper
  • salt to taste
  • 2 carrots, cut in julienne strips
  • 1 cup tomatoes, cut in half
  • 1/4 red onion pickled with 1 tablespoon red wine vinegar and 1 tsp Italian seasoning
  • 4 cups tossed salad (toss with vinegar, oil, and italian seasoning
  • optional: your favorite dressing

Instructions

  1. Cook the water, quinoa, and chicken breasts in an Instapot for 15 minutes.
  2. Remove the chicken breasts and shred them in a bowl with 2 forks.
  3. Stir the quinoa and divide between 4 bowls.
  4. Top with all of the ingredients. Optional add your favorite dressing on top of all if you like.
