Here is a healthier version of nachos using lean turkey and beef with beans and lots of veggies. It is easy to make. We cooked extra meat to use in another recipe.

Ingredients

  • 3 cups nacho chips
  • 2 cups cooked lean ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1.5 cups shredded cheddar cheese
  • 1 cup diced fresh tomatoes
  • 1/2 cup diced bell pepper
  • 1 jalapeno
  • 1/4 cup sliced green onion
  • 1 avocado diced

Instructions

  1. Place the nachos on a half sheet pan. Top with cooked meat and drained beans. Top with shredded cheese.
  2. Bake in 400 degree oven for 10 minutes or until cheese melts.
  3. Top all with the rest of the veggies.
  4. Serve immediately.
