Ingredients

  • 8 chicken tenderloins
  • 1/2 cup saltine cracker crumbs
  • 1 teaspoon olive oil
  • 4 yukon gold potatoes
  • 4 cups broccoli
  • Optional honey mustard dressing for chicken (low sodium)

Instructions

  1. Dust chicken tenders with cracker crumbs. Press them well to adhere. Spray with a little oil and place in the air fryer or oven at 400 degrees for 20 minutes.
  2. Place potatoes in the air fryer or oven and bake at 400 degrees for 20 minutes. It helps to coat them with a little olive oil. You can season with salt and pepper when done. They are done when they are crisp and tender.
  3. Steam broccoli and serve on the side.
