Chicken Tenders with Yukon Gold Wedges

Ingredients
- 8 chicken tenderloins
- 1/2 cup saltine cracker crumbs
- 1 teaspoon olive oil
- 4 yukon gold potatoes
- 4 cups broccoli
- Optional honey mustard dressing for chicken (low sodium)
Instructions
- Dust chicken tenders with cracker crumbs. Press them well to adhere. Spray with a little oil and place in the air fryer or oven at 400 degrees for 20 minutes.
- Place potatoes in the air fryer or oven and bake at 400 degrees for 20 minutes. It helps to coat them with a little olive oil. You can season with salt and pepper when done. They are done when they are crisp and tender.
- Steam broccoli and serve on the side.
