Roast Your Own Tomatoes

Roasting is a great way to bring out the flavors of fresh summer tomatoes. Simply slice a few tomatoes in half, and toss them with a sliced or whole garlic clove, a tsp of dried herbs, and a splash of olive oil, then place them, cut side down, on a baking pan.Put that baking pan into an oven that has been preheated to 325 degrees Fahrenheit. Roast the tomatoesfor two hours (or more, depending on moisture content).Use roasted tomatoes with rice, fish, BBQ, lasagna, etc.Pay attention to the pan. Metal pans that contain aluminum do not react well with acidic tomatoes. Also, make sure the tomatoes have plenty of space; don?t crowd them!
