Here is a rainbow grazing board you can make for your next party or cookout.

Ingredients

  • 6 cups lettuce
  • 1 cup cherry tomatoes
  • 1/2 cup sliced radishes
  • 1/2 cup berries
  • 1 cup grated carrots
  • 1/2 cup orange bell peppers
  • 1/2 cup corn
  • 1/2 cup chickpeas
  • 1/2 cup green peppers
  • 1 cup sliced cucumbers
  • 1/2 cup chopped avocados
  • 1/2 cup halved snow peas
  • 1/2 cup sliced green onions
  • 1/2 cup sliced hot peppers
  • 1/2 cup fresh herbs
  • 1/2 cup blueberries
  • 1/2 cup sliced red onions
  • 1/2 cup shredded red cabbage

Instructions

  1. Rinse and prep all ingredients — slice, dice, or shred as needed.
  2. Spread the lettuce across a large board or platter as your base.
  3. Arrange each remaining ingredient in its own section, working around the board in rainbow order.
  4. Serve with oil and vinegar, Korean red pepper flakes, or your favorite dressing on the side.
  5. Let everyone build their own plate, picking colors as they go.
