Handout: Dense Bean Salad: The Meal Prep Trend Worth Trying

Mediterranean Dense Bean Salad

Ingredients

  • 1 can chickpeas, drained and rinsed

  • 1 can cannellini beans, drained and rinsed

  • 1 cup cucumber, diced

  • 1 cup cherry tomatoes, halved

  • 1 bell pepper, diced

  • 1/4 cup red onion, finely chopped

  • 1/4 cup parsley, chopped

  • 1/4 cup feta cheese (optional)

Dressing

  • 3 tablespoons extra virgin olive oil

  • 2 tablespoons lemon juice

  • 1 tablespoon red wine vinegar

  • 1 teaspoon Dijon mustard

  • 1 clove garlic, minced

  • 1/2 teaspoon dried oregano

  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the chickpeas, cannellini beans, cucumber, tomatoes, bell pepper, onion, parsley, and feta cheese.

  2. In a small bowl, whisk together the olive oil, lemon juice, vinegar, mustard, garlic, oregano, salt, and pepper.

  3. Pour the dressing over the salad and toss well to coat.

  4. Refrigerate for at least 30 minutes before serving to allow the flavors to develop.

  5. Store in the refrigerator for up to 4 days.
