If you purchase coleslaw in the grocery store, it is usually high in sodium and fat. This one is low in sodium and fat but super decadent in flavor!

Ingredients

  • 1/2 head cabbage, shredded or sliced thin with a knife or mandolin
  • 1 carrot, grated
  • 2 tablespoons grated fresh ginger
  • Juice of one lime (microwave first for a few seconds to get more juice out of it)
  • 4 tablespoons mayonnaise
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • chopped fresh parsley

Instructions

  1. Mix all ingredients in a large bowl. Chill until ready to serve. Garnish with lime and sliced ginger.
