10 MinIf you purchase coleslaw in the grocery store, it is usually high in sodium and fat. This one is low in sodium and fat but super decadent in flavor!
Ingredients
- 1/2 head cabbage, shredded or sliced thin with a knife or mandolin
- 1 carrot, grated
- 2 tablespoons grated fresh ginger
- Juice of one lime (microwave first for a few seconds to get more juice out of it)
- 4 tablespoons mayonnaise
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- chopped fresh parsley
Instructions
- Mix all ingredients in a large bowl. Chill until ready to serve. Garnish with lime and sliced ginger.
